Crock Pot Stuffed Chicken:

Cooking dinner in the crock pot is a perfect solution for people who are too busy, hate cooking or are just too tired to even think about making dinner after a long day of work. Hit It!® Fitness trainers encourage clients to eat healthy well rounded meals throughout the day. This is an easy and healthy option, and great for leftovers for tomorrows lunch!
Directions:
Take 4 thawed chicken breasts, and make a long slit down the center
Saute 1/2 onion, 2 garlic cloves and 4 large handfuls of spinach until cooked and spinach is wilted. Season to taste with salt and pepper.
Take the spinach mixture and combine with 1 handful feta cheese.
Stuff the breasts with the mixture and place in the crock pot.
Pour 1/2 cup white wine and 1/2 cup chicken broth in the crock pot and cook on low for 6 hours.
Serve with brown rice or quinoa and a side of steamed veggies! Enjoy!
