3/4 lb macaroni pasta
1/4 cup extra virgin olive oil
2 garlic cloves, chopped
1 pint cherry tomatoes
1 9oz bag spinach
4-6 oz goat cheese
3/4 cup chopped walnuts
In a large pot of boiling, salted water, cook the pasta until al dente. Drain and reserve 1/4 c of water. Return the pasta to the pot. In a medium skillet, heat the skillet over medium heat. Add the garlic and cook until golden, about 4 minutes. Stir in tomatoes, spinach and reserved pasta water. Cook until heated through. Season with salt and pepper. Stir in the pasta along w goat cheese. Transfer to a serving dish and sprinkle the walnuts on top. Make a big batch for lunch throughout the week and enjoy! A healthy lunch includes a good balance of carbs, protein and fat. The spinach and tomatoes are great veggie sources! Enjoy!
