Baked Boneless Buffalo Chicken Bites

We even cook up, sample and share these recipes with our friends and family to make sure they taste yummy and satisfy cravings.  This one is a winner!!
Ingredients:
1 cup whole wheat flour
2 teaspoons kosher salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 cup Panko bread crumbs
2 egg whites
1/4 cup non-fat milk
3 boneless, skinless chicken breasts cut into small pieces
Sauce:
1/4 cup of your favorite wing sauce (i.e. Frank’s)
1 tablespoon butter
2 tablespoons water
Directions:
Pre-heat oven to 475 degrees. Combine flour, paprika, salt, black pepper, cayenne pepper and Panko bread crumbs in a small bowl. Whisk eggs and milk together in another small bowl.
After you cut chicken breasts in to small pieces, dip each piece of chicken into egg mixture, then into breading mixture and repeat to double coat each piece.
Place a piece of foil onto a cookie sheet and spray with non-stick cooking spray.
Arrange chicken on baking sheet and bake for 8-10 minutes or until chicken is brown.
Turn the heat up to broil and continue to cook the chicken for 2-3 minutes or until crispy.
As chicken cooks, combine Buffalo sauce, butter and water in a microwave safe dish. Cover and microwave on high until mixture bubbles, then remove, stir and keep covered.
When chicken pieces are cooked remove from oven and cool for a few minutes. Toss chicken and hot sauce mixture in bowl until all pieces are coated. Serve immediately.
